I have already used the name trick to evolve an Eevee to an Espeon. I have the research tasks now that requires me to evolve Eevee to Espeon during the day. How do you make this happen? Is it just hit and miss and I have to hope that I eventuslle get the right evolution?

Set Eevee as your buddy and walk 10km with it. This means you must clect 2 candy. Once you have done this evolve your buddy during the day. You must evolve your buddy Pokemon. If you change your buddy did way through it could cause issues. You are best making sure you walk the distance and evilve the buddy Pokemon all in one go.
