So I’ve figured out how to fill a bucket of sand and I’ve filled up 5 buckets like it asks but I don’t know how to build a better sandcastle than the one that is there. There’s no area for me to drop the buckets that are full of sand?

You need to headbut the existing fancy sand statue a few times until it is destroyed and just a pile of sand. You will be able to drag the buckets of sand over to the location where the old statue was and it will start to build a new statue. Empty 5 of the full buckets of sand here to complete the quest.
