Should I keep trying the raid mentor achievements?

I'd avoid repeating attempts on wings reported to be bugged if your main goal is achievement progress. The reports suggest Wing 8 is the most reliable one for now. Check whether an achievement actually updates before putting more time into it.

I wouldn't remove the achievements just because they're currently unreliable. A fix would be better, and temporarily marking affected achievements as unavailable would also be clearer than leaving people to guess. Until there's confirmation they're working, treat attempts on the other wings as uncertain.
