I’m curious about how the random signature bundle works. If I don’t have all the legendary cards from this expansion, will I end up with a signature legendary for one that I already own as a normal version? For example, if I’m missing 4 legendary cards and only one of them has a signature version, am I guaranteed to get that signature version, or could I receive any signature legendary that I don’t currently have?

Nope, you won’t get a signature version of a legendary you already own. You’ll only get the signature of a legendary that you don’t have at all.
