I’ve made sure not to aggravate any villagers and they have an iron golem nearby with clear paths to their workstations and beds. Yet, the cost for trading sticks keeps going up. What could be the reason behind this?

It’s actually all about supply and demand within the game. If you frequently trade sticks without engaging in other trades, villagers will raise the prices as a response to the high demand for that particular item. This is part of a built-in economic mechanic in Minecraft.
