I’m building my first serious gaming PC with a goal of 1440p gaming using a 5070 Ti, primarily for AAA titles rather than eSports. I’m trying to decide between the 9700X and the 7800X3D CPUs. Would the L3 triple-cache on the 7800X3D offer any real benefits over the newer 9700X? Also, I’m curious about the actual difference between 6 core and 8 core CPUs. Would opting for a cheaper 9600X possibly save me some cash?

I’d recommend spending a bit more on the 7800X3D. It’s going to give you great performance and will keep your system relevant for a lot longer than the 9700X. Totally worth the extra cash!
Honestly, you should definitely go for the 7800X3D. It offers amazing performance for gaming and is very efficient, so cooling isn’t a big deal. Trust me, once you go X3D, you won’t want to go back to anything else!

Actually, it doesn’t need that much cooling. A decent cooler, like a Phantom Spirit or Peerless Assassin, should keep it under 70°C while gaming with just a couple of tweaks. It’s not as demanding as some say!
