It doesn’t have to be an MMORPG specifically, just something that fits a busy schedule and still feels rewarding.

If you’re open to more casual or single-player style games, Genshin Impact is pretty fun and fits a light play style well. Also, Dirt Rally 2.0 is a neat pick if you like racing and just want to jump in for a quick session with a sense of progression over time.
Guild Wars 2 is pretty awesome for what you’re describing. It has daily and weekly activities, plus dynamic world events that you can jump into whenever you want. I usually just log in, knock out my dailies and see if an event is happening. It never feels like a time sink since you always end up with useful rewards, and it’s okay if you miss a day.
I used to grind big open-world RPGs for ages, but if your time’s limited, offline games might suit better. You can play a few hours a week just moving through the story or side quests at your own pace without feeling behind.
