I just discovered that my server has a GTX 1660 Super GPU that’s mostly sitting idle while I’m using a Radeon RX 5500 XT in my desktop. I’ve read about the compatibility issues with Nvidia on Linux, and I’m wondering if it’s worth making the switch since benchmarks show it’s around 50% better. What do you all think?

You already have both GPUs, so why not give the Nvidia one a shot? If it causes any big problems for you, you can just switch back to your current setup without any hassle.
I’ve been using a 2080 Ti with Arch Linux, and the proprietary Nvidia drivers have worked perfectly for me. Since you have both cards on hand, try swapping them out and see how it goes. If you run into trouble, you can always go back to the RX 5500 XT.
The 1660 Super outperforms the RX 5500 XT by about 25% and has 6GB of VRAM. I’d recommend switching over to the Nvidia card. Just keep in mind that driver issues with Nvidia are mostly a thing of the past, especially with newer generations. Just give it a try and see how it plays out!
But if you have the option, just stick with AMD for less hassle in the long run.
