My Pokemon levelled up and started to evolve but then it stopped and a message popped up to say the pokemon stopped evolving. What happened, why did it stop? I wanted it to evolve!

This happens if you hit the A or maybe B button when the evolution is in progress. The next time the Pokemon levels up, it will start to evolve again and if you want it to evolve, make sure you do not press any buttons and the evolution will happen as normal.
