Are there any games, new or older, that feature an attacker and defender dynamic with bomb defusal gameplay, similar to the experiences in CS:GO, Valorant, or Rainbow Six Siege? I’m curious if there are other options that capture that same type of strategic shootout but mix it up a bit.

You might want to give Fortnite’s Ballistic mode a go. Even though it’s not super popular, it ticks the box for having an attacker-defender setup around bomb defusal. It’s kinda unique compared to pure CS or Siege vibes but definitely worth a try if you’re looking for something fresh.
I’d suggest trying out ‘The Finals’ if you haven’t already. It’s a bit different from typical bomb defusal, but the structure is kinda similar. You spawn a ‘vault,’ which is like a bomb on a timer, then defend it or take it to a cash-out spot, sort of like bomb sites. The game is free and really fun, it brings a fresh take to this genre.
If you’re open to a twist on the formula, the Call of Duty series has a mode called Search and Destroy. While it doesn’t exactly mirror CS, Valorant, or Siege, it does have attackers and defenders with objectives. It’s a bit faster-paced, but definitely an option if the core idea appeals to you.
I checked it out recently, and yeah, it’s fun! The 5v5 style feels like a refreshing twist.
