I’m planning to buy the ASRock Steel Legend 9070XT tomorrow, and I currently have a Ryzen 7 5700X in my setup. Right now, I’m using a 6700XT and just wanted to know if this new GPU will work well with my CPU or if there’s a risk of bottlenecking.

There shouldn’t be any major bottlenecking issues, but it really depends on the resolution and the games you play. Like, at 4K, your GPU could bottleneck, while at 1080p, the CPU might hold things back a bit. Just keep in mind that it changes based on what you’re playing.
It’ll work well overall, but in some situations, the Ryzen 7 might limit the 9070XT’s performance, especially in CPU-intensive games at higher resolutions. I’m using a different setup but see similar patterns.
