I’m about to build my first PC after using a prebuilt for five years, and I’m a bit nervous about using an AIO cooler. How likely is it that my AIO will leak and potentially ruin my entire setup? What should I do if it does leak? Also, is there a reliable air cooling alternative to something like the Thermalright Frozen Vision CFM 240 69?

It’s next to zero when compared to other risks. I mean, I hardly come across posts about AIOs leaking. If something does happen, though, have your warranty info handy!
Honestly, the leak risk is very minimal. Most reputable manufacturers will help you out if something happens and you have proof of the leak. Just make sure you install it correctly!
I’ve had a Corsair AIO running for over a decade without any leaks. It’s not a guarantee, but they can be very reliable! Just keep in mind, if it were to fail, it’s more likely the pump will die before it starts leaking.
