Enemies keep striking first when I go into combat. Does this mean there is a way to influence this so that I can strike first?

You will need to make sure you have your sword equipped and just as the enemy is about to hit you, you need to swing the sword in order to damage them. This will count as your first strike and you will be able to select the first attack while in combat.
