Most streamers either use emulators on their PCs or play directly on consoles with a capture card. Emulating the games is fine, but what’s illegal is downloading the ROM files. If you don’t talk about it, you’re usually in the clear. For the games you mentioned, the Switch 2 can play Wind Waker, Ocarina, and Majora’s Mask, so with an HDMI capture card, you’re good to go! For Twilight Princess, you’ll need a Wii U to capture in HD, but it might come to Switch 2’s Online Service soon. Going for original consoles gets more complicated since you’d need extra equipment to convert signals to HDMI.
