I’ve been using a Multishot Crossbow with Arrows of Healing II, and I used to be able to take down Zombie Pigmen with just a few shots, even when really up close. Considering they are undead, shouldn’t these arrows do more damage? I’m noticing similar issues with Arrows of Harming II on Illagers and Piglins. Did something change with the crossbow, or is there something I’m overlooking?

Nah, they haven’t really nerfed the crossbow or anything. The thing with healing and harming arrows is they do up to 6 hearts of damage max. So, even with the Multishot, you’re looking at needing a couple of hits minimum, not just one-shotting, unfortunately.
