I’m really intrigued by Resident Evil Village and I’m eager to dive in, but I’m not a fan of the first-person camera view that feels similar to Call of Duty where you mostly see the gun. Is there an option to change it to a third-person view like in Resident Evil 2 Remake or Resident Evil 4 Remake?

Absolutely! By purchasing the DLC, you can enable the third-person perspective. Just make sure to grab the Gold Edition, and you should be good to go.
Yes, you can switch to a different camera angle! If you get the Gold Edition of the game, it comes with an option to play in third-person mode.
