I’m considering buying a demanding game that’s on sale on GOG but not on Steam. I want to ensure my PC gets the best performance possible. How does UMU fit into this? Does it really help with performance, or is there still a significant difference between using GOG and Steam?

UMU should give you about the same performance as Steam since it uses similar runtimes, but it might include some fixes that Proton doesn’t have. Think of UMU more like an experimental version of Proton rather than the stable one.
